Salpicon, we eat this dish during the hot temperatures in Nicaragua, the dish is chopped cold boiled meat, you cut the meat in cubes, boiled it with onion, tomatoes, garlic and bay leaf, until tender, then you chopped the meat and mix it with onions, green bell pepper, salt to taste and lots of lime juice, it is typically served with rice and ripe plantain. Some people likes it warm, but that is a personal choice. Besides who wants to eat a hot meal in a 100 degree weather! ;)
